Constructed of stainless steel, the Vulcan VC5ED convection oven resists dents, scratches, and rust. It stands off the floor on 233/4-inch legs to make the interior accessible. Each door has its own handle and independently opens to reveal five oven racks in the cavity. Positive stops keep the racks in place and minimize interior damage. With a rotary dial and digital display, the temperature is adjustable from 150 to 500 degrees Fahrenheit. For delicate product, employees can switch the fan setting to low and use the gentle cook mode, which reduces the power to 75 percent. The 5-hour timer and audible alarm keep track of the cook time, while employees can monitor baking product with the interior light and glass windows.
If something goes wrong, the Vulcan VC5ED commercial convection oven automatically diagnoses the problem, speeding up maintenance. At the end of operating hours, the cooldown mode can be used to push heat out of the oven. Employees can remove the racks for cleaning and the doors for unhindered interior access. Any food particles or buildup can be wiped swiftly out of the porcelain-enameled interior because it is nonstick.
