Keeping cooked food at warm, safe temperatures, the True STR1HRI89-1S Spec Series roll-in heated cabinet has a stainless steel heating element. Heat generated from this element is evenly moved throughout the interior by low-velocity fans. The temperature can be set to operate between 140 and 180 degrees Fahrenheit and is shown to staff on an external display. Humidity in the cabinet can be manually controlled with a vent on top of the unit, and a 12-inch by 20-inch water pan is included if additional steam is needed.
With its stainless steel ramp and 89-inch overall height, the True STR1HRI89-1S insulated heated cabinet accepts 72-inch-tall racks. Bumpers in the cabinet prevent racks from denting the interior walls. While users are loading racks, the door can stay open at 120 degrees, but it self-closes before that point to prevent temperature fluctuations. A lock is integrated into the door to prevent unauthorized access, tampering, and theft. Constructed of stainless steel, the interior and exterior are heavy duty and resistant to rusting. Foamed-in-place insulation keeps heat inside the unit to maintain the right temperature.
