The Southbend EH/20SC half-size convection oven uses a dual-speed fan system to push hot air around its cooking chambers—this diffuses cold spots to ensure food receives even heat. This oven has two cooking chambers, doubling its output to help busy restaurant kitchens keep up with customer flow. Each chamber has five adjustable racks with 11 different positions.
Food is cooked and then kept warm in the Southbend EH/20SC MarathonerGold convection oven, suspended in a warming state at the end of the baking cycle so chefs can retrieve and serve it when ready. Glass-paned doors on the oven chambers let kitchen staff look within the oven to monitor the progress of baking cycles. The oven chamber interiors are made of porcelain, which is quick to wipe clean and should be checked long term to avoid potential cracking.
