Cook-and-hold functionality in the Southbend EH/20CCH MarathonerGold convection oven keeps food hot once the baking cycle completes, so chefs can remove and serve warm food. Its two cooking chambers double the oven’s output – a useful feature for restaurants with high customer volume. Each chamber has five total racks that can be placed in 11 positions.
This Southbend EH/20CCH half-size convection oven has porcelain chambers; this construction offers quick, convenient cleaning and requires long-term maintenance to avert potential cracking. The oven chambers use 2-speed fans to heat the food, circulating hot air in waves over food to disperse cold zones and create uniform heating conditions. Glass panes in the chamber doors provide chefs a look in the oven to supervise food as it cooks.
