A perfect all-around grain milling solution, the KoMo Duett provides both freshly ground flour and flaked grains. Its beautiful cabinet, constructed of solid beechwood and furniture grade beech veneer, contains separate motors that allow you to grind and flake simultaneously or independently. Included with the KoMo Duett is a handmade ceramic bowl with a cool, smooth surface that complements the mill’s warm finish.
The Austrian-made KoMo Duett lets you start the day with delicious fresh flakes in the morning, make fine flour at midday for an afternoon cake, and crush poppy seeds for both. It’s offered in a choice of models, the Duett 100 and the Duett 200. The two share the same flaker, but on the grinder side the 200 model features an extra large motor for high speed flour output. The cabinets and hoppers of the two models are identical.
Oats are a naturally soft grain and more of our customers roll oats than any other grain in their Duett—but many other grains including wheat, rye, barley and millet can be flaked too, with a little preparation. These grains are normally dry and hard. To soften them, hold them under running water briefly in a strainer. Then spread the grains on a cloth or towel to let them dry over night or for at least 3-4 hours. This time will vary depending on the grain used, but a little experimentation will help optimize the process. The softened grain will flatten nicely into flakes, similar to commercially available rolled oats. At the same time this contact with water starts an enzymatic process which makes it easier for your metabolism to assimilate the minerals in the grain.
Capacity of the grinder hopper is 2 lb., 10 oz. The 360 watt motor of the Duett 100 produces 8-9 ounces per minute for bread flour texture, while the 600 watt motor of the Duett 200 turns out 10-11 ounces per minute. Both grinders have precisely fitted corundum-ceramic burrs and are adjustable to grind to any texture you choose, from exceedingly fine flour to coarse meal (just cracked if you wish). All by simply rotating the hopper to align with your choice on the front texture setting scale. The flaker has a 6.4 oz. hopper and its 140 watt motor flakes 2.8 to 3.5 oz. of oats per minute. Flake thickness is adjustable from .3mm to .65mm.
If you want the full range of capability from grinder to flaker, the KoMo Duett offers significant savings compared to buying a mill and a flaker separately. The grinder side will grind hard or soft wheat, oat groats (dehulled oats), rice, triticale, kamut, spelt, buckwheat, barley, rye, millet, teff, quinoa, amaranth, sorghum and dent (field) corn. It will also grind lentils, dry beans (pinto, red, garbanzo/chickpeas, kidney & more), and dried, non-oily spices. It isn’t suitable for herbs, oilseeds like flax or sesame, popcorn, or fibrous materials.
Dent (field) corn and soybeans can be ground to any texture from cracked to meal to very fine flour. For these very large-kerneled grains, grind first with the stones opened widely to produce cracked grain, then a second time if you want flour. The KoMo Duett will grind oats to a wonderfully soft, fine textured flour, but open the stones about five clicks (or so) wider than you would for a hard grain like wheat, otherwise the soft oat flour will fill the stones’ furrows and in-feeding will stop. Opening the stones further will give you a cereal grind for porridge, or coarser yet for cracked oats, similar to steel-cut.
The Duett’s flaker is perfect for rolling all softer grains like oat groats. As with all KoMo grinders, cleanup is minimal and easy and access to the milling chamber takes just a moment and requires no tools.
