The Hatco FSHC-12W1 Flav-R-Savor humidified holding cabinet holds as many as 12 sheet pans or 24 steam table pans. It keeps a large amount of cooked product warm and ready to serve while maintaining the food’s texture and appearance. It holds products from 80 to 200 degrees Fahrenheit, and proofing is possible with the lower temperatures. A setting in the humidification system ensures proofing is accurate, and humidity is provided by water in the 2-gallon capacity reservoir. The digital read-out shows the interior temperature, which can be adjusted with electronic controls.
The Hatco FSHC-12W1 Flav-R-Savor humidified holding cabinet is made of damage-resistant stainless steel for simplified cleaning. It has insulated sides, top, bottom, door, and control panel to efficiently trap heat. Products are clearly visible through the Lexan door, which is field-reversible to suit a wide range of needs. It has heavy-duty hinges for strength, and four 5-inch casters aid in transportation.
