Equipex SEM-60Q
The Equipex SEM-60Q salamander broiler works great for melting cheeses and broiling meats, using quartz heating elements on the top to create infrared heat. That heat moves downward onto food sitting on the wire rack, which is long and can accommodate a plethora of food at once. If only a small amount of food needs browning, a switch activates only part of the heating elements. For intense heat, users can turn the elements up to 635 degrees Fahrenheit or lower the element-filled top closer to the food. As food cooks, grease runs off the food and into a collection tray below.
To prevent food from sticking, users can add 1/2 inch of water to the tray, helping speed up the cleaning process at the end of the day. For durability, this Equipex SEM-60Q salamander broiler has a sturdy, stainless steel body and must be installed with the included 4-inch legs or on 1-inch feet that are sold separately. If installed over high-heat-generating equipment or open flames, it must be on an insulated shelf.
