The Doyon E336 proofing cabinet can hold three single racks or two single racks and 10 shelves. Its temperature range is from 90 to 110 degrees Fahrenheit and humidity is at maximum 95 percent. The heating system evenly distributes heat and humidity for an ideal proofing environment. This unit has an electronic countdown timer to monitor the process. This proofer has automatic water entry and does not require a drain.
