The Carter-Hoffmann M212S-2T drawer warmer holds six third-size, 2¹/₂-inch-deep pans, and because these pans sit in separate sections, their time and temperature can be individually controlled. This design also prevents flavors from transferring between different products. Users can monitor cooking times and temperatures on the digital displays, and each pan cavity can support 25 programmable menu items for popular recipes through the USB port. When a holding cycle is complete, the audible alarm notifies the operator to prevent food from being held too long.

In each section, aluminum pan covers sit over the food pans with a gravity-lowering design. These covers hold moisture inside the pans and extend holding times, but if the covers are not needed, they can be removed. This Carter-Hoffman M212S-2T countertop heated holding cabinet is made of stainless steel-a material that increases durability and reduces the risk of rusting.
