The Carter-Hoffmann HL9-18 full-height mobile heated cabinet has a dial control system that enables the operator to set the temperature from 85 to 200 degrees Fahrenheit and humidity on low, medium, or high. Regardless of the heat setting, the unit can produce up to 90-percent relative humidity. There are separate dials for heating and humidity, and this system allows proofing and holding to be done in the cabinet.

Heat in the unit is even and efficient with the stainless steel duct system, ensuring heating is quick and results are consistent. This duct is removable without tools, so it is easy to clean. Along with the duct, the 5.7-quart water reservoir can be removed for convenient emptying and cleaning in the dishwasher. Made of polycarbonate, the reservoir in this Carter-Hoffmann HL9-18 humidified holding cabinet is durable, and it comes with a clear tint that enables the user to monitor the water level. If the water level reaches a low level that is unsafe, an indicator light illuminates on the control panel.
