The Carter-Hoffmann HL8-12 hotLOGIX8 full-height heated holding cabinet holds 12 full-size sheet pans or 24 full-size steam table pans that sit on stainless steel trays. Removable for cleaning, the trays have a standard 3¹/₂-inch spacing between them with an adjustment available in 1³/₄-inch increments. Because the unit has two compartments, operators can access small sections at a time while keeping heat inside the cavities. Its cavity doors are reversible in the field and open ergonomically. Made of stainless steel, the interior and exterior are heavy duty and efficient to clean, and the welded construction increases strength.

Temperatures in the Carter-Hoffmann HL8-12 insulated mobile holding cabinet range between 160 and 200 degrees Fahrenheit and are adjustable on the electronic temperature control. Users can keep up with the temperature on the digital display, and a low-temperature alarm notifies nearby employees when the level drops out of the set range.
