The Carter-Hoffmann CH900 cook and hold oven can accommodate nine trays measuring 18 inches by 26 inches or 120 pounds of meat. Its stainless steel construction holds up against denting, scratching, and rusting, while high-density fiberglass insulation helps the oven heat efficiently. It has a field-reversible, double-panel door with a sturdy magnetic latch and self-closing hinges. To prevent marking and damaging surfaces, the unit has vinyl bumpers, and its 5-inch-diameter casters enable movement for servicing or cleaning.

The Carter-Hoffmann CH900 oven has a blower fan system that evenly distributes heat, can cook at temperatures as high as 325 degrees Fahrenheit, and holds items in temperatures from 100 degrees to 200 degrees Fahrenheit. Cooking and holding temperatures each have their own displays and controls, and the current temperature can be seen on the digital thermometer by pressing the view actual temp key. Food can be cooked to a given temperature or by using the 18-hour digital timer.
