The Carter-Hoffmann CH800 cook and hold oven can hold eight 18-inch-by-26-inch pans or 120 pounds of meat, and items inside the cabinet are cooked evenly with the blower fan. It gently circulates heat to lock juices in meat and decrease food shrinkage. Cooking temperatures can be as high as 325 degrees Fahrenheit and holding temperatures range from 100 degrees to 200 degrees Fahrenheit. There are separate displays and controls for the cooking and holding temperatures. The digital thermometer displays the current cooking or holding temperature When the operator presses the view actual temp key, the digital thermometer displays the cooking or holding temperature.
The Carter-Hoffmann CH800 half-size oven is constructed of fully welded stainless steel with turned in seams, while heat is prevented from escaping by high-density fiberglass insulation. So the door is not accidentally left open, the field-reversible, double-panel door has self-closing hinges. Its silicone door gasket holds up against high temperatures, while walls and other surfaces are protected from marks and damage by vinyl bumpers. Transportation is enabled by 2-inch-diameter casters, two of which have brakes so the unit can be stationary.
