The Carter-Hoffmann CH1600U full-size cook-and-hold oven can reach 325 degrees Fahrenheit using separate cook and hold controls. It has a top-mounted blower heater to ensure cooking is uniform, and a heat duct is mounted on the side to caramelize product and seal in natural food juices, increasing flavor. When cooking is complete, this unit holds the food between 100 and 200 degrees Fahrenheit to maintain proper serving temperatures, and to ensure heat stays inside the cabinet, it is insulated with high-density fiberglass.
A heat probe in the Carter-Hoffmann CH1600U cook-and-hold oven sticks inside food to monitor its internal temperature. Operators can view this number on the digital thermometer and adjust it using touchpad controls. To ensure precise cooking, this unit has an 18-hour timer that counts down until food is ready.
