To accommodate various products, the Alto-Shaam 1750-TH cook-and-hold oven generates heat between 200 and 325 degrees Fahrenheit for cooking, while its holding temperature range spans from 85 to 205 degrees Fahrenheit. Its Halo Heat technology generates relatively low temperatures and doesn’t add humidity or implement fans that could impact product texture. Gentle, warm air circulated evenly throughout the cabinets eliminates cold spots for uniform results. For quick, intuitive operation, users can adjust the simple controls to program recipes, adjust temperatures, and set parameters for probes so the unit can determine when to convert the unit from cook mode to hold mode.
Both sections in the Alto-Shaam 1750-TH cook-and-hold oven have three wire shelves that accommodate 10 full-size pans or 20 half-size pans, and each cavity has a 100-pound weight capacity or 75-quart volume capacity. The reach-in layout lets operators load and retrieve pans directly, while each section’s durable, solid door withstands heavy use. Because this unit is ventless and doesn’t need water, it can be installed without a traditional kitchen hood or water hookup for easy installation. This stainless steel unit measures 2511/16 inches wide by 335/8 inches deep by 57 inches high and is mounted on 31/2-inch casters for maneuvering.
