Alto-Shaam 1200-TH Description
Both cavities in the Alto-Shaam 1200-TH cook-and-hold oven accommodate eight 20-inch by 12-inch by 21/2-inch pans or (16) 10-inch by 12-inch by 21/2-inch pans. Each compartment is equipped with three wire shelves and two stainless steel side racks with 15 pan positions spaced on 17/16-inch centers. For uniform results, Halo Heat technology moves warm air gently through the cabinet without using fans or adding humidity that can impact food quality. This system generates heat between 200 and 325 degrees Fahrenheit for cooking, and for holding, it produces temperatures from 85 to 205 degrees Fahrenheit.
The Alto-Shaam 1200-TH cook-and-hold oven’s simple controls are simple to navigate so operators can program recipes and adjust temperatures. For smooth operation, the probes check internal product temperature and convert the oven from cook mode to hold mode automatically once product’s internal temperatures fall within specific programmed parameters. Users can set the unit to cook product overnight to reduce labor and boost productivity. The pans are accessed directly for insertion and removal due to the cabinets’ reach-in configurations. With its durable, corrosion-resistant stainless steel construction, this 229/16-inch-wide by 331/4-inch-deep by 7011/16-inch-high unit withstands heavy wear and can be moved for catering, servicing, and maintenance.
