Alto-Shaam CTX4-10E Description
The Alto-Shaam CTX4-10E Combitherm electric combi oven’s cabinet holds five 12-inch by 20-inch hotel pans on two levels of stainless steel shelves. Products placed on the shelves can be cooked based on an internal temperature reading measured with a probe or timed setting. Increasing cooking options, there are four cook modes to choose from: heated, steam, combination, and retherming. ExpressTouch controls in this Alto-Shaam CTX4-10E full-size combi oven provide additional features to further maximize cooking flexibility. With this panel, operators can select the fan speed, choose a browning level, and delay start times so the unit is preheated when necessary. These settings also enable users to vent steam from the cavity after a cook cycle, while the cleaning system in this oven automatically rinses the cabinet based on the operator’s selection.
