The guided airflow pattern in the True TSSU-72-08-HC food prep table’s refrigeration system provides uniform temperatures in the food pan area and cabinet interior. Its forced-air design holds product between 33 and 41 degrees Fahrenheit-a level that can be set and adjusted by the operator to suit specific applications. Accessible from the back, the condenser slides out so that components are convenient to reach for maintenance.
In the True TSSU-72-08-HC prep table, R290 hydrocarbon refrigerant-a more eco-friendly type than traditional options-is used by the factory-engineered, self-contained capillary tube system. The pan area includes eight sixth-size pans that measure 4 inches deep, but this area can also accommodate 6-inch-deep pans, which are sold separately. To protect the pans from contaminants, a stainless steel hood and lid assembly can be pulled over the ingredients. Beside the pan rail, a large space is available for small equipment and dry ingredients.
