Because constant infrared heat comes from the top, the front edges and holding surface retain warm temperatures, preventing too much heat from escaping and fighting temperature variations. For durability, this stainless steel displayer has hard-coated aluminum heat shelves, and it has 1.5 inches of insulation for efficiency. Its polished mirror reflectors ensure heat goes in the right direction, while tempered glass sides are on the shelf ends for visibility.
